Fuji Bistro has a bountiful selection of options at a good price. It's a highly-rated hole in the wall in Colorado Springs that you've never heard of, full of sushi rolls, Thai, and Chinese food options. Has something for all Pan-Asian interests. I have been satisfied every time I've gone!
The restaurant is tasteful and clean, with a mix of booths and chairs. I have never seen it busy here (much like Mirch Masala), so it's a gem combo of great food, fantastic service (especially because it's slow), and no wait time.
Fuji Bistro also has a sectioned off area for large reservations, and I have seen it get used a couple times. I took my team lead here for lunch once, and he also enjoyed this place. I try to cook at home as much as possible, but my wife and I do visit at Fuji Bistro about once a month.
Most places make a fine miso soup, and Fuji Bistro is included. It's $6 for an ozeki sake. I haven't had sake in years, since I used to work at a sushi place, and I'd forgotten the taste. It tastes like a strong beer. Come to find out it's fermented rice wine, and it's really smooth. Definitely use the little cup that it's served with. You want to drink sake in large sips, at least I did.
We may have actually been here during happy hour, but just didn't notice. If you want a sake heavy experience, looks like happy hour would be a good time for it!
I wanted something lighter on carbs, so I ordered their king dragon naruto roll. The roll is quite large, and I had more difficulty eating it with chopsticks because of the lack of rice to hold it together. Still, I had fun eating it. It was a refreshing roll that felt just right for a lunch.
My wife ordered a black pepper udon noodle sizzling plate. When one of their sizzling plates come out, it's exciting, so much so that I took a video of it:

This was a lunch for us, so all of this was plenty for us to have. Service is accommodating and kind, the food here is excellent, and it's across the street from our neighborhood shopping center, so it's convenient for us. I'm going to keep eating here!
